Simple Chicken Adobo Recipe

I can’t think of a better recipe to start to “teach” someone who wants to start cooking Filipino food. The flavours are so unique, the chicken is tender and it is perfect with steamed white rice – a staple in Filipino cuisine.

 

 

My Simple Chicken Adobo 🍗 RECIPE:

Serving Size: 2-3 people Time: 40 minutes Difficulty: Easy  

Ingredients

  • 6 chicken thighs bone-in and skin on (mine are from Costco)
  • 5-10 cloves of garlic
  • 3/4 cup soy sauce
  • 1/4 cup vinegar
  • 2 tsp black peppercorns
  • 4-5 dried bay leaves

Directions

  1. Marinate the ingredients together overnight (at least 4 hours) in the fridge
  2. When you’re ready to cook, heat up a pan on medium heat and sear the chicken thighs for 2-3 mins on each side
  3. Save the sauce from the marinade and add it back in after searing both sides
  4. Add 1 cup of water, then cover and cook on low heat for 25 mins
  5. Serve on top of freshly steamed white rice 🍚! Enjoy!
